“It makes me so happy to only eat plants!”

As I write this, I have just completed hiking 156 miles (carrying a 25 lb backpack) through and around Patagonia in less than two weeks. Last year I climbed Kilimanjaro, and each day I hike 2.5 miles up a mountain outside our Utah home with 1700 feet in elevation gain. Not bad for a 56-year-old! Proof that eating a whole food, plant-based diet not only provides enough protein but enough fantastic energy to fuel my whole life!

My journey to a plant-based lifestyle began with a natural interest in nutrition and a desire to find out the healthiest way to eat. I grew up in a weight-conscious family where being thin was the goal, but how to achieve this in a healthy way eluded me. I remember following my parents as they tried the Atkins diet, the grapefruit diet, Weight Watchers, and other low calorie plans. Each new eating program usually only lasted a short time and were followed by bouts of overeating (usually junk food) when I got too hungry and fed up to continue. During the last 2 years of high school and first year of college, I really struggled with disordered eating and my weight fluctuated 20 pounds a couple of times a year during this time. Not feeling in control over this aspect of my life really made it difficult for me to feel the Spirit or to feel good about myself. There truly is a connection between feeling good physically and feeling good spiritually and having good self-esteem.

After I got married, my husband and I moved to Xian, China in 1982. It was the first time I encountered really thin, healthy, active people. They ate primarily a whole foods, plant-based diet (with relatively small amounts of animal products). I was so surprised to see tiny women literally inhale huge bowls of rice! With absolutely no processed foods available, people snacked on whole sweet potatoes, ears of corn and sunflower seeds in the shell. Could it be that what I’d been told my whole life—that eating lots of carbs would lead to weight gain—was wrong? This started me on a quest to find out how we are meant to eat. I studied nutrition books and tried to discover “the best” eating plan, but my search was frustrating because there seemed to be no consensus on how humans should eat. “My strength comes from the Lord”

I am 17 years old and live on a small island in Australia called Kangaroo Island. It is renowned for its unique natural country and produce. Food has always been part of my family and large extended family. We often gather together and have fatty meals based on meat, cheese, eggs, you name it. As a result, I learned to love and appreciate food.

In 2015, my uncle was suffering from thyroid problems and stumbled across the film Forks over Knives and decided to try the diet. The changes helped him and so he shared it with us.

Even before my uncle shared this diet with it, I had always felt that we were not living the Word of Wisdom to its fullness, but I continued to consume animal products. After I watched Forks Over Knives I turned to the Word of Wisdom and read it again. Reading the Word of Wisdom convinced me to change.

When I announced to my family the changes I was making, they were fine with it, but they were not willing to change, so I faced changing my diet alone, except I had the help of Heavenly Father and our Savior. “A distinct thought came into my mind, ‘You can do better.’”

May of last year, as I was sitting at the kitchen table one morning, a distinct thought came into my mind, “You can do better.” It wasn’t in a tone of chastisement, but rather it came as one stating a simple fact. I sat startled for a moment, but quickly recognized the source of those words as being from the Spirit. I had recently felt prompted to study the effects of nutrition on mental health, a topic close to my heart. The research that I found was fascinating and led to further and further study and discovery of the very powerful effects that food choice can have, not only on our physical health, but also on our emotional and mental well-being as well.

That morning in the kitchen, I had just read several articles on the effects of antibiotics given to farm animals and their documented negative effects on long-term health on those of us consuming those animal products. The truth of those statements and facts, for whatever reason, spoke to me more clearly and more directly that day than ever before. And so I sat and pondered. It was then that the Spirit helped me to see that I could do better, especially since I was the gatekeeper of my family’s general diet and eating habits.

It is often said that when the student is ready, the teacher appears. The teacher showed up in a big way from familiar sources that morning. I was immediately reminded of the Biblical account of Daniel gaining favor and strength due to his firm decision to eat grains and abstain from the king’s meats. I turned to the Bible to re-read the account and found myself reading a well-known story with fresh eyes. Daniel’s countenance shown and was filled with great knowledge and wisdom. What an amazing blessing! I felt so strongly that he was not only blessed for his courage in being obedient to a spiritual law, but he also was experiencing direct effects physically for having obeyed a physical law that had physical consequences. He was living the Word of Wisdom fully and experienced blessings of spirit, mind, and body.

I quickly turned to D&C 89, a section that I was so very familiar with. What was different this time in my reading was that I read each verse more literally than ever before. I no longer focused on the “thou shalt not’s,” but rather read from the perspective of the “thou shalt’s.” I had been keeping the portion of the Word of Wisdom well when it came to abstaining from drugs, alcohol, etc. I had been eating a healthy and well-rounded diet by most standards. But there it was stated so clearly—I could do better in eating meat sparingly, eating more whole foods, and foods in season.

“The doctor was giddy about my results.”

Having been raised in Idaho in a family that has always been very active in The Church of Jesus Christ of Latter-day Saints, I was taught about the Word of Wisdom. I was taught that the use of tobacco, drinking of alcoholic beverages as well as coffee and black tea was prohibited. I was aware that other substances were ordained for the use of man by God including fruits in their season, vegetables, and grains. I had been raised to believe that since meat was ordained for the use of man, it was also good to consume. In addition our family took pride in the dairy business that they were involved in, even though my father chose another path of employment shortly after my birth. We believed the commercials that milk “does a body good.”

After getting married and being on my own, I never allowed margarine on my dinner table, only the finest butter. Ice cream was purchased by the gallons and always readily available, as well as cheese. I reveled in some of my specialty dishes; my three egg ham and cheese omelets were a favorite of my family, as well as my pecan pie, grilled New York Steak, and my award winning chili (which was always more carne than beans). In the United States, the LDS culture is immersed in the Western diet that I was so accustomed to. Potlucks, barbeques, funerals, ice cream socials, and all other social gatherings within the Church are centered on a diet of meat and dairy.

On a Sunday morning in the spring of 2013 I woke to a nagging pressure in my chest with radiating pain in my neck and left arm, deep inside. This is a symptom that had been slowly getting worse over the previous two years. At first it was only noticeable when I was involved in extreme exercise, but it gradually showed up when I simply walked up a flight of stairs. This morning I was not doing anything, but it was there. I thought about skipping Church that day and resting, thinking that I may have just overdid it the day before on our motorcycle ride. I was reminded of a talk that I had heard at some conference in the past that if we didn’t want to do something the Lord wanted us to do, then we should really do it because there was something that we were supposed to learn from it, so I got ready for Church with my wife and we went.

During Sacrament meeting one of the speakers relayed a recent experience he had endured when he had a heart attack, so afterward I felt inspired to ask him about the symptoms. He asked me why, and I relayed to him what I was feeling. He told me to go immediately to the emergency room, and to not attend the following Sunday School or Priesthood meetings. Well I, being the stubborn soul that I am, attended Sunday School anyways; however, the pressure in my chest was not getting better, so afterward I told my wife that maybe we should go to the emergency room so they could rule out my heart as the culprit.

“Man is not made to eat flesh”

Roughly three years ago—I was 81 years old at the time—I was diagnosed with kidney cancer. My right kidney was so cancerous that the doctors gave me zero percent chance of saving it, so it was surgically removed. The cancer spread to my bladder. Consequently, over about a period of a year and a half, I had 12 chemotherapy sessions and several non-surgical probes to get the cancer in remission. Several of these chemo sessions left me with a bladder infection that took antibiotics to cure. Needless to say, my health was in a very precarious situation.

It was the twelfth, and last chemo session, plus an infection that really got the best of me. My entire body, from the neck down, ached terribly. The experience lasted for roughly two days. I say “roughly” because for the most part I was in a daze and had no recollection of time. Because of the pain, I couldn’t sleep, and I could barely stay awake. I ached if I sat up, and I ached if I tried to lie down. Near the end of this time, I suppose because I was so lacking sleep plus so weak from the pain, I started to experience hallucinations.

I had several different hallucinations, but of interest to this story is near the end when I saw before me a large grid that resembled a giant-sized, brown “Weetabix,” like is found in a Weetabix cereal box. I had a bucket in my hand and I was trying to dip out the pain I felt in various parts of my body from one square of the grid and pour it into another square. I was becoming more and more frustrated. This didn’t work! My pain was still one hundred percent there, only I kept shifting it around!

After what seemed like an eternity of fruitless dipping to end my pain, something within me said, “You have to get rid of the pain, not just mask it by trying to hide it somewhere else.” In other words, dipping it out of one Weetabix square and pouring it into another square wasn’t the answer. What was of special interest after that “Aha! moment” was a very clear, audible voice that said to me, “Man is not made to eat flesh.”

“Our life will never be the same again!”

I always thought we ate fairly healthy. Baking our own bread from grains I milled, eating only a little meat, and then basically no red meat, no drinking of soft drinks, etc. Of course, I did have a sweet tooth and liked cheese very much (you know, I’m Swiss, and those of you who have tasted our cheese and chocolate will understand!). Then, our family experienced an extended period of existential stress which brought me health-wise to a point where I hardly could eat anything anymore. I had suffered from severe rheumatism before, with chronic pain mainly in my shoulders, but with all the other joints suffering also (which meant never being without pain day and night). But now with this added stress, my skin had turned so yellowish that even strangers would address me about it. Around my eyes were deep, dark circles. I kept losing weight. I had random itches all over my body all the time. I started feeling as if my body could stop working at any given moment. My thighs had white marble lines on them and going to the toilet smelled like walking into some of those old folks’ rest rooms. I had to leave early for everything because hurrying was too much and got me out of breath. All the while I had no strength to deal with any kind of extra stress. I felt depressed constantly instead of being happy and easygoing, as would reflect my personality. I was always worried and feeling bad. It was miserable!

Realizing things could not go on like that much longer, I adjusted my diet. I had already let go of all refined sugar products. When I realized that cheese caused feelings of anxiety, I stopped eating that, too. Finally, I started eating only the things I digested well and made me feel physically good afterwards: fresh produce (fruit, vegetables, nuts and seeds). For one year, I ate nothing else. Fruits in the morning (usually a fruit smoothie with some flax seeds, brown millet and pure honey in it) and a mixed salad of vegetables and lettuce with some seeds and nuts in the afternoon. Today I think this saved my life. As I got better, I started to reintroduce other foods again. A few years later, as my husband, Markus, also struggled with his health, we felt we should change to a whole food, plant-based diet. Our health improved slowly, but surely. I was able to go back to a more normal life style in general again, feeling less depressed and having more physical energy and no pain. Happiness came back and in the (early!) morning I started to be fully awake again. No more lead in the bones or short breath.

“The Gospel is not weight. It is wings!”

The Gospel is not weight—it is wingsToday I’d like to share the story of one Latter-day Saint mother. This person represents many others: good, faithful members of the Church who live with a certain misery and despair over their weight, their health, and the impact it is having on their families. Almost weekly, I hear from such a person seeking for help and wondering if there is still hope.

I’ve received permission from this person to share excerpts from her emails to me last year. I have left out some details to protect her identity and shorten the story. (Note that I responded to every email she sent me, but I do not include my emails to her.)

I hope her amazing story of transformation will inspire everyone who reads this!

Dear Jane,

I have been following your comments on Meridian Magazine for some time now. I am writing to you in a bit of desperation. I am over 60 years old, about 5 feet tall, and about 100 pounds overweight. I have always been active in the church, have a strong testimony, love the Gospel with all my heart. I am only saying these things to help you understand my situation a little better. I was usually a little chubby, but since my marriage, I just got bigger and bigger and bigger. I have not been good at serving healthy, nutritious meals, as the cheaper “casseroles with cream of soups” were always my go-to. I love cake, cookies, brownies, candy, homemade ice cream, chips and dip, homemade bread, etc. Sadly, I raised my children the same way, and now some of them struggle with weight issues. One day a while ago, my daughter said to me that she felt that I didn’t understand the atonement, because I tried so hard to live every law perfectly, and repent for the tiniest mistake, yet in some areas (I know she meant weight) I was not following the commandments. Though it was a bit painful, it was truly a needed wake-up call, but still I have not taken the steps to change.

One day a few months ago in my personal prayers, I said that I really wanted to get my life in order, but I just could NOT be obedient to healthy eating. I knew I was sinning because of my refusal to humble myself and control my eating. I have felt badly since admitting to the Lord that I just wouldn’t do that, but I really believed it was true! It makes me disgusted to think that terrible food means more to me than eternal life with God! And in reality, it doesn’t, but I knew I couldn’t lie to Him, when I wasn’t willing to change.

Two years ago, I had been eating more healthy for quite a while and had lost some 66 or so pounds, though I was still at least 50 pounds overweight. But I went on a trip, and we celebrated with foods I hadn’t tasted in a long, long time. Coming back home, I just went wild and eventually gained almost 45 of those pounds back. It has now been two years, and I am still here, almost 45 pounds heavier, and just hopeless. I really am huge, and it’s terribly noticeable being so short. I know through the years it’s been awful for my husband to drag around a gigantic wife, and it has been extremely embarrassing for my children. What is wrong with me!!!! I honestly sometimes wonder if it is just too late for me—kind of the mentality that this is who I am, who I’ve always been, who I always will be, and that there is just no hope for me. I KNOW that is evil thinking, but I honestly feel so overwhelmed at this point in life that I don’t know if I even want to change. How could I really give up the foods I really like—FOREVER?

“I can’t really explain the excitement I felt”

For the past 10 years or so, I have had a hard time maintaining or losing weight. I tried a lot of different methods, but didn’t have much success. I have always been good about exercising, but I couldn’t seem to find the right eating plan. In January of 2013, my sister found a diet that seemed fairly healthy, so my husband and I tried it. We were both able to lose weight, but we didn’t feel like we could live that way. Also, I didn’t like eating the amount of meat that it included, and I always felt less than satisfied because of the lower carb content.

Once in a while I would look through the Word of Wisdom to see if I could pick out something that I had missed before. When I would do this, I would often end up feeling discouraged. I could see that it said to eat meat sparingly and that grains should be the main part of our diets. But I felt like I had to choose between eating that way and being in a healthy weight range. It made me sad. Also, I felt like I didn’t know what to cook for meals that would fit into those guidelines.

In December of 2013 my husband and I were looking at returning to the diet that my sister found that had worked for us. I’m sure my husband wasn’t looking forward to it and started looking online for alternatives. On December 23, he sent me a link to an article by Jane Birch with the words, “This seems like the right approach.”

I read the article and immediately wanted to learn more. I can’t really explain the excitement I felt over learning how I could possibly eat like the Word of Wisdom suggests, lose weight, and avoid a wide range of disease, all at the same time! I didn’t want to wait to get Jane’s book in the mail so I ordered the ebook version of Discovering the Word of Wisdom. I couldn’t put it down. My husband and I decided to give it a try. Through the holidays we tried a few recipes here and there. On January 14, 2015, we went 100% (at least as far as we had learned at that point).

“I have the goal of never needing medication”

I grew up in California. We were a health-conscious family, although I didn’t know it at the time. It was just how we lived—lots of fresh fruits and vegetables, and my parents were good examples of being active. But we also ate plenty of hamburgers, milk, ice cream, and treats. The Word of Wisdom was introduced to me when I was 17 and joined The Church of Jesus Christ of Latter-day Saints. Although my parents are not members, they learned a bit about the Church at that time and were interested in the Word of Wisdom. I remember that they said to me, “The Church members may not smoke or drink, but they have their vices. You are joining a fat church. If this information is in the scriptures, and the members believe the scriptures are true, why don’t they follow the counsel?” And that’s a very good question. Why aren’t we LDS people a healthier example to the world?

My husband grew up on a potato farm in Idaho. They were a “meat and potatoes” family. His grandparents, who lived a few hours away, owned a dairy farm, so butter, cream and whole milk were plentiful when they visited. Some of their family’s favorite foods were creamed peas and new potatoes, Sunday roasts with potatoes and gravy, big farm meals to keep the workers filled. Bread and butter were on the table at every meal. There were always lots of sugary desserts and treats. They grew a big garden and canned everything. This diet was typical for that small, farming community.

Randy and I met in college, married, and had four children. Early in our marriage I had major surgery to correct an unknown birth defect and lost the use of one kidney. After recuperating, I was determined to be healthier than ever, eat well, and exercise. But as our family got busier, I turned to convenience foods— pizza, cold cereal, burgers, like everyone else. I always loved fruits and vegetables, but my finicky kids did not eat many vegetables and I’m sorry to say that I gave in to them rather than fight.

At age 32, I went back to college, taking 1-2 night classes each semester. This was a very stressful time as my husband was called up to serve in Desert Storm with his Navy Reserve unit. I was on my own with four young children for nine months while he served. I continued on with college, finally having to commute to USU in Logan for my last five years. I started to have feelings of anxiety that I did not understand. They were horrible and lasted for over ten years. I don’t remember what my family ate. I could barely swallow food during this time, but I battled through, finally receiving two college degrees at age 42.

“I remember laughing out loud and jumping for joy”

For as long as I remember I have struggled with body image issues and a never-ending battle to maintain a weight without struggling to do so. My heaviest weight was 35 pounds over my personal ideal. While seemingly not a huge amount overweight, I will say that I am a petite 5’2 and that as little as 5 pounds gained will affect my wardrobe, believe it or not! For someone of my stature eating the standard American diet is a CONSTANT struggle not to gain. I felt hungry most of the time, and when I did listened to my hunger cues, I put on 10 pounds in an instant. I could not understand why it was such a struggle.

In 2009 I decided to go vegetarian for just a month out of a dare. My brother did not think I could do it and said I was all talk and no game. Naturally I stuck out my chin and clenched my jaw, sibling rivalry at its best. Not only did I prove him wrong, I surprised myself by staying on the diet after a month was up. Something in my mind had triggered. I was looking for real answers now, not just what diet could do for my outward appearance. Questions like “Is there one diet for humans?” “Can diet cure cancer and prevent heart attacks and Alzheimer’s?” and “Did God want us to struggle this much with food?” arose. I was now on a quest. I read everything I could get my hands on to find my answer but found myself reading in circles. There is SO much conflicting information out there that at one point I felt like I had hit a dead end.

In this quest, I HAD concluded that there had to be a diet that ALL humans could thrive on because I felt that God did not want us diet obsessed, fat and sick. Life is so much more. These bodies are gifts and it just did not make sense for there to be this much struggle. Yet I could not seem to find the answer.

Soon after my husband and I got married, we decided to try and start a family. After a year of no luck, even after being on hormone treatment, we went to see a fertility specialist. In 2013 I was diagnosed with PCOS (Polycystic Ovary Syndrome). I had irregular periods, as long as 60 days and sometimes none at all. Overall I was hormonally imbalanced. Yet again, I was frustrated with my body and hated that I had to be medicated in order for my body to function properly. Luckily for me I was already on a path that would not only heal my body, but heal my relationship with it as well.
