“If she believes it, she will apply it.”

If you would have told me 15 years ago that there would come a day when I would not only be a vegetarian but that I would also not even have any cravings for meat whatsoever, I would have told you that you were absolutely crazy! I had consumed the standard American diet my whole life. I had always been heavily involved in athletics, studied biology in college, and was on my way to an Ivy League dental school. I thought I was pretty smart and knew what it meant to be healthy. I would come to realize that I had a LOT to learn.

There were a few major events that took place on my journey to this realization. The first was marrying the most amazing woman on earth. My wife, Janeen, is one of the most dedicated people I know, particularly in her desires to increase her knowledge and have the happiest and healthiest life possible. Whenever she comes across any information that she thinks may improve her life, she doesn’t hesitate to try it out. If she sees qualities in other’s lives that she would like to have, she always thinks, “Well, let’s see if what they are doing will work for me,” and she goes to work. She never thinks to herself, “That is great that it works for them, but I am sure I could never do that. I could never give up such and such.” She is willing to put in the time to study it out, make sacrifices, and find out for herself, no matter how crazy people may think she is, no matter how much opposition she may face. Even if it means going against what others have taught her, including those she knows have love and concern for her.

I first witnessed this quality in her as a teenager when she began to investigate The Church of Jesus Christ of Latter-day Saints. She had many LDS friends growing up. She began to admire many qualities in their families, things she hoped to see in her future family life. She decided to find out the reasons why they lived the way they did. She asked for a copy of the Book of Mormon and asked if she could take the missionary lessons. As she read, listened, studied, and prayed, she came to know without a doubt that what was working for them would work for her and for anyone else who truly sought out the same answers. Throughout her entire investigation of the Church, she faced significant opposition from family and friends. Several thought she was totally crazy, most had great concern for her, some felt she was turning away from what good and knowledgeable people had taught her. However, other’s lack of understanding has never held back Janeen from applying what she comes to know, and shortly after she reached the age of 18 and could legally decide for herself, she was baptized.

“I believe every verse in the Word of Wisdom”

I grew up in the 1960’s, and I can still remember the television commercials for cigarettes. I remember seeing the man on the horse in the great outdoors, smoking and promoting his brand. It wasn’t long after viewing those ads that the science proving smoking is bad for us resulted in cigarette commercials being banned. As a child, I would read the Word of Wisdom, and I remember thinking, “Wow, the Word of Wisdom taught these principles almost 150 years ago, and now science is just figuring it out.” Over the last 20 years, as I’ve studied diet and diet-related research, I’ve come to believe that the Word Wisdom goes beyond warning us against addictive substances—giving us knowledge, for example, that it is pleasing to God that we do not eat animals unless it is necessary. This too is now being confirmed by science.

My mother was the first person who introduced me to the idea that eating a meal without a meat entrée was okay. She made a wonderful garden skillet full of vegetables, and then served us a small handful of almonds as a side dish. We loved it! I also have a memory of my bishop and his family being vegetarians, though, I thought maybe this was a little extreme. But not long after, when I was married and started studying medical research, I came across a study that linked red meat to breast cancer. I remember talking with my wife and suggesting to her that we probably should stop eating beef to avoid any chance of her developing breast cancer. Even though both our grandfathers were cattle ranchers, that did not deter us from making changes to our diet.

“I tried every diet imaginable”

From the time I was thirteen I thought I was fat. I tried every diet imaginable and read every weight-loss book I could get my hands on. I would do anything to be skinny: drink lemonade for ten days, count calories, hire personal trainers. I pled with the Lord to just show me the right way to lose weight. Ironically, I was never more than ten pounds overweight.

About seven years ago, the Lord led me down a different path, a path that changed my focus from outward appearances to true health. It was then that I was introduced to cancer.

“I knew I was being guided”

My journey to a whole food, plant-based diet has been wonderful! I have felt guided, inspired, and so blessed to gradually have the truth revealed to me about how I should eat.

I grew up in a family that used whole grains and tried to avoid refined sugar. I tried to continue with these values when I had my own family. Almost 30 years ago I was persuaded to cut dairy milk out of my diet because our sixth daughter had terrible colic. Cutting the dairy from my diet helped her so much—I was very motivated. By the time I was done nursing her, I no longer missed the dairy.
