“I don’t ever want to go back to the way we were eating”

I didn’t realize how sick I was.

Growing up, I ate mainly the Standard American Diet (SAD). I was aware that some foods were healthier than others, but I didn’t know why or how that affected my body. I would get sick a lot with what I now identify as chronic sinus infections. I have very early memories of my knees aching, often causing weakness and pain that stayed with me well into my adult years. In college, I visited a GI specialist because of some things I felt were off. He did some tests and couldn’t find anything wrong. So, he suggested, “Well, you could try going off gluten and see if that helps.”

While on my mission, I was overcome with such severe knee aches that I was not able to do much of what was required of me. I sought a priesthood blessing from the ward mission leader. In the blessing, he told me to look to the Word of Wisdom for answers. At the time I studied it, but didn’t change much about the way I was eating. Now I know that blessing was God trying to tell me how my body can be healed from the inflammation in my knees that was causing these life-long problems.

When I married my husband, we decided not to wait to have children. But, my menstrual cycle needed some regularity so I took metformin to deal with symptoms of PCOS. All these things I thought were just part of life and what my body did.

My husband has always enjoyed being fit but has had problems with muscle inflammation, regular ear infections and headaches for years. He didn’t enjoy broccoli or nuts when we married. But, when he found that they are “good for you,” he started eating them with great enjoyment. When he began to develop digestive issues, we really began to look for answers. I was willing to help him on his journey, but I didn’t feel like I needed to “get healthy.” I did think it would be good to lose a few pounds of baby weight after my second child was born.

Through his research, he learned about Whole Food Plant Based eating by reading The China Study which led him to other resources of knowledge. He was all on board right away. Me, not so much. I felt overwhelmed with the thought of cutting out meat, eggs and dairy from my cooking and figuring out how to  feed my family this way. However, I did believe what I was learning could improve our health. So, I was willing to start progressing this way. Continuous study from reliable resources has been a great motivator to keep trying.

We also studied scriptures and prayed specifically to know how to make this transition, especially when it comes to social situations and others who were not as supportive. As we learned more, we were excited to find other members of The Church of Jesus Christ of Latter-Day Saints that have transitioned to more Whole Foods and Plants from their study of the Word of Wisdom. I didn’t fully make the connection until then. God asks us to use meats “sparingly” and “it is pleasing unto [Him] that they should not be used, only in times of winter, or of cold, or famine.” (D&C 89:12,13) Why had I not trusted in His word?

“The cessation of meat and dairy has reaped health benefits I never expected”

15 years ago I was diagnosed with Type 1 Diabetes. Since that time it’s been like the Indiana Jones ride trying to understand and navigate the positive and negative effects of carbohydrates and insulin. Paramedics were invited over to our house on multiple occasions to wake me up from an insulin-induced coma. Fortunately in all of these instances I was able to give the grim reaper the proverbial stiff arm. I’m grateful to still be among the living to share my story. Maybe there are others who can relate to my experience in finding the Word of Wisdom and the hidden treasures therein. This is how I recall my enlightenment.

It was about a year ago, February/March of 2018. My son Jordan and his wife Cassidy had been eating a whole food plant based (WFPB) diet for a few months. Up until this point I had been working out 4-5 times per week and thought I was doing a decent job of watching what I ate. They approached my wife Valerie and I with a WFPB diet as a possible solution to better health. We didn’t think it was really applicable to us because we were already “watching what we ate.” LOL. We listened to their position but thought, “Naw, this ain’t for us.” Little did I know that it was the love of bacon and eggs twice a week for dinner that had commandeered my mind like an opioid.

Little by little my wife Valerie and I would discuss the WFPB benefits as she read verses of “the bible” to me (How Not To Die by Dr. Michael Greger). My wife was much easier to convince than I. She didn’t grow up on hot dogs and macaroni and cheese like I did. I also loved pasta with a rich, creamy stroganoff sauce—a recipe that was handed down from generation to generation. How Not To Die convinced me by the overwhelming amount of specificity and controls the data provided. Dr. Greger referenced study after study after study. It seemed legit enough for me to experiment upon his words. It also made me hypothesize that God already had this data and just wanted us to study it out in our own minds and then ask Him if it’s right. Better yet, give it a whirl. As a business analyst by trade, the data cogently spoke to my mind, while the spirit gently whispered to my heart. They converged and my WFPB path was born.

I went plant based around April 1st 2018, and boy was it an emotional cork screw! I didn’t realize how emotionally attached I was . . . attached I was . . . attached I was to the food I ate. I’m still in food therapy, learning new coping skills on how to detach from things like bacon, cheese, Campbell’s soup, sour cream, cream cheese, etc. LOL.

We went to the scriptures and studied the Word of Wisdom to find more enlightenment. There were three scriptures that spoke to us at a higher decibel level than the others. They were Doctrine and Covenants 89:12, 13, & 15—

“I love eating this way. It makes life so simple.”

All my life my legs and feet have felt really heavy, sometimes swollen, but I never knew why. I remember ten years ago I was praying and asking the Lord for help and He sent me to D&C 89. At that time I learned that meat was to be eaten sparingly, during winter and famine. It was summer, and it was difficult, so I did not follow it. So, I remained with my swollen feet.

In January 2012, I was hit by a car and my kneecap, tibia and femur broke. I had three surgeries and still was having inflammation even though I was taking anti-inflammatory medication. I hit my head during the accident, and I was having panic attacks and anxiety. I felt depressed and overwhelmed often. So, I started doing research because I did not want to be taking pills and become dependent. This is how I heard about alkaline and acid food. I started researching and changed my diet by eating more alkaline, non-hybrid foods. But I got so anxious about everything I was eating that I could not sleep. So, I went to the Lord with that and felt that that kind of anxious spirit doesn’t come from him.

By researching on the Internet, I discovered Jane Birch and the Word of Wisdom diet she writes about. When I read this, I remembered that ten years earlier the Lord had sent me to D&C 89. I automatically knew that what she was saying was a confirmation of what the Lord had told me ten years ago. I stopped eating meat, dairy, eggs, sugar, and most processed food. I now eat extremely little fish and use only a tiny bit of olive or coconut oil once in awhile. Now, the spirit I feel is one of peace instead of being anxious or stressed about food.
