“I dropped 80 pounds”

Growing up I always felt like I was a little “pudgy.” When I got to high school I wanted to be on some sort of team. My mother wouldn’t allow me to play football so I decided to try out for the swim team. We didn’t have a very good team (we didn’t even have our own pool), but I made the team and began swimming and also became quite lean. I continued that way for the next few years and enjoyed being more slender.

When I left for my mission to South America I weighed 170 pounds. I maintained that weight for most of my mission except when we lived with an American family. The good brother worked in the oil fields in Venezuela and enjoyed the standard American diet. I had never eaten filet mignon before in my life, but each Friday night his wife would cook it for us, along with potatoes and gravy and all the other good stuff. Soon my weight jumped to 200 pounds! I could hardly fit in my pants any longer! After a few months I was transferred to the other country (Colombia), and my weight began dropping back towards normal.

In my last city I got ill and lost some weight, which got me back to 170 pounds. My mother was so concerned that on my arrival home she decided she needed to “fatten me up” to a healthy weight. My sweetheart Judy had waited for me, and we were married eight weeks after I returned home. They say that newlyweds gain about 10 pounds the first year, and we did! Before I knew it I had gained 40 pounds.

“When God, science, and logic all line up”

It is hard to communicate the love of junk food and meat I have maintained throughout my short 26 years. Because my mom was careful to ensure we had primarily healthy options at home, I frequently raided my cousins’ and friends’ pantry and cupboards when I was invited over for play dates or sleepovers. I relished the white bread and sugary cold cereal. I snarfed down candy bars and gobbled up anything with a hint of sugar. What a great treat after being restricted to whole wheat, home made bread, and oatmeal! For my birthday one year my mom got me a package of steaks, and a year later she gave me some beef sticks. She knew me well and was good enough to indulge me.

As a missionary my love of food grew. Serving in the U.S. I ate as much lasagna, burgers, and whatever I could each night and agreed to third and fourth servings of dessert. The members were always emphatic that “missionaries need lots of food!” and I was quick to agree with them. That was the life! Of course I gained 13 pounds after just 3 weeks in the MTC and nearly 40 pounds in the mission field. When I met and married my wife she often noted my funny way of choosing meals at restaurants. “How big is it?” was (and often still is) my primary question. While I had gained some weight, I wouldn’t say I was unnaturally big. Indeed I didn’t really even feel I had a problem. What I wasn’t as thoughtful about was how this way of eating might be influencing other aspects of my life, including my spirit.

Over a year ago, my wife and I made a drastic change (documented in a blog post, “Our New Diet”). My father had given us a copy of Jane Birch’s book, Discovering the Word of Wisdom for Christmas (2013). After reading it, we agreed to give it a shot for at least three months and see how it went. Remarkable things happened for me physically, including the elimination of headaches that were once prevalent, an abundance of energy, and a newly discovered joy in eating foods I had once considered beyond touching with a fork! I also continued to lose weight and settled down at a point that I was at in probably 8th grade. Often I would wonder, is this a good or a bad thing that I weigh so little?! I consider it a good thing since I have more energy than ever before, continue to exercise each day, and feel wonderful. I finished a triathlon earlier this year and have almost beat my mile time set my freshman year of high school. That is pretty crazy!

My name is Cy Welch. My wife is Pat Welch. I am 81, and my wife is 79.

When I read “Discovering the Word of Wisdom” by Jane Birch on Meridian Magazine, it rang a bell with me. I was struggling with the normal health problems of aging, such as lack of mobility, some arthritis, enlarged prostate (BPH), hypertension, hearing problems, and lack of strength. My wife is diabetic, arthritic, has fallen many times over the years, has hearing problems, and lots of migraine headaches, etc.

After I read a couple of the articles on “Discovering the Word of Wisdom” on the Internet, I bought the book and started the transition to a whole food, plant-based (WFPB) eating. It has been an interesting journey to say the least. I also bought and read The China Study as recommended by Jane. It connected the dots for me on health problems we were dealing with and just made sense. We went on a two-week vacation about this time while making the transition and found out just how difficult it can be to find food which supports the WFPB lifestyle on the fly so to speak. We did the best we could and are now about 90% changed over to WFPB.

One of the first benefits I noticed was my mobility began to return. I used to be fairly flexible, but I slowly lost my flexibility over the years. I am now flexible enough to get in and out of the van without bumping my head on the top of the door opening. I feel almost twenty years younger. I’m also slowly losing weight, although I wasn’t much over weight. I have much greater flexibility, strength and endurance.

“Hodgkin’s Lymphoma made me the perfect student”

One of the most liberating pieces of knowledge I have learned is that the human body has the ability to heal itself. It has the power to heal any ailment or disease. Changing the diet is the ticket. If we continue to feed our bodies the same foods that made us sick in the first place (the typical dead American diet), then the body will not have the vitality it needs to heal. Changing to a vegan, living food diet provides the vitality for each cell in the body to detox and heal. This information is the hidden treasure that has been buried and most of us never find it, but “when the student is ready the teacher appears.” I WAS READY!

Nine months of chemical onslaught from conventional treatment for Hodgkin’s Lymphoma made me the perfect student. I was ready to soak up everything I needed to know to get out from under the grip of fear. The fear of the cancer reoccurring was with me every moment of every day. I held a negative vision of a dire prognosis during my first check-up scan after I had finished treatment. I thought to myself, “I can’t live like this, fearing the worst.”

I wanted a day without fear. Ann Wigmore did more than that. She opened the door for me to the knowledge of green juices, living foods, and a way of eating that restores the body’s ability to heal itself. The information that is contained in her book, The Wheatgrass Book, inspired me so much that I immediately followed the instructions on how to grow wheatgrass. I don’t recall it being difficult. I obtained trays, organic soil, organic seeds, and a set of shelves, and set them up in my kitchen. I was living in London at the time and had no problem growing it. I took delight in seeing how quickly the grass grew.

The juice didn’t taste all that great, but I knew it was powerful stuff. There were times when just the smell of the grass juice would make me feel nauseated. I remedied that by holding my nose as I drank it! Because I knew it was good for me I religiously consumed 2 ounces of juice every morning. That wasn’t too hard to do for my health and peace of mind. That was way back in 1996, and I am thankful to say I have not needed the service of a physician since that time.

“We love the food. We love how we feel.”

Our family was introduced to the whole food plant-based (WFPB) diet on March 23, 2013 when we watched Forks over Knives. My husband walked in the door that night to the exclamations of our elementary-aged boys saying, “Guess what, Dad! We’re vegan!” Boy, was he surprised.

With a host of health problems, including a recent three-year collapse, I was desperate for answers to my health woes and willing to try anything—although I did have reservations about a diet that didn’t include meat, dairy, or eggs. That went against everything I had ever learned in school.

We had always eaten lots of fruits, vegetables, and whole grains, but, at the time, we also had four dairy goats that we milked twice a day. I made yogurt and cheese several times a week, and we drank all the goat milk we wanted. Our ducks provided us with five fresh eggs every day, which I also managed to use with no problem. Meat wasn’t as big of an issue for us. With seven children (six of whom are boys), I always tried to stretch meat as far as possible—frying it and mixing it into our soups, chili, casseroles, etc. But I could immediately see that eliminating not only meat, dairy, and eggs, but also refined flour, sugar, and oils from our diet was going to be a hardship.

And it was. In spite of the four vegan cookbooks that my enthusiastic son ordered online from the library while we were watching Forks over Knives, I was at a loss. I had cooked from scratch for our family for twenty years, yet didn’t know how to cook without those “staples.” The first few weeks were a cooking nightmare. It felt like all I did was stand in the kitchen all day and chop fruits and vegetables. Physically, I felt miserable—tired and moody with lots of headaches.

“Satan no longer has a hold on me through pain in my body and addiction to food”

During my first year of marriage I started experiencing the effects of eating a mostly processed “dead food” diet. I gained almost 50 pounds during my first pregnancy, but after losing the weight by eating better and exercising, I kept losing without trying. I began to feel sick. I was hungry no matter how much I ate, and I had no energy. Every morning I woke up with very painful hunger pains. I had to sit on the side of my bed with my head over my knees. I felt hot and had absolutely no energy. I had a horrible headache every morning as well, with congestion in my ears and sinuses. The congestion in my ears was so bad that one or both of my ears were completely plugged. I would eat and then feel hungry within an hour. I was unable to go for walks or work in the yard, something I loved to do. I had a hard time staying awake to read a book to my baby. I was very backed up and felt constantly bloated. I chose to be happy, but I felt irritable all of the time.

I had many experts look over me and many tests done, but no one could help, so I felt compelled to search things out on my own. I knew something wasn’t right, and I wanted to figure it out. As I was led to people, books, and resources about natural health, the most profound and powerful feeling moved through me from head to toe, and I knew that my body could heal. The Spirit whispered to my heart through the gift of the Holy Ghost that I was born capable to heal. It makes sense! We are creations of a loving Heavenly Father. Look at the magnificent mountains, breathtaking sunsets, beautiful fields of flowers and trees. We are the most precious creation of all. Surely we are born capable to heal!

“I find so much joy as I prepare nutritious meals”

I first heard the term “plant-based diet” a year and a half ago. I was nearing the birth of my fifth baby and was anxious to lose the baby weight and get back into shape. I had successfully lost weight in the past on a high-protein, low-carb regimen, so I visited a body builder web site, ordered protein powders and selected menus and workouts to begin as soon as possible after my baby was born.

In the meantime, my sister told me about a documentary on Netflix called Hungry for Change. I watched it, and then I watched Forks Over Knives. Both films outline the dangers of eating the standard American diet (SAD) and show the benefits of eating a variety of whole, natural foods. Forks Over Knives introduced me to a wealth of information about the danger of animal protein, which was completely new to me.

I knew immediately I should not follow my high-protein, low-carb weight loss plan. I ordered books from many of the experts in the documentaries including Colin Campbell, Rip Esselstyn, John McDougall, and Joel Fuhrman. I read everything I could about a plant-based diet and was impressed with how closely it follows the Word of Wisdom. I had always had a nagging feeling that the “body-building” diet was not in line with the Word of Wisdom, but I didn’t realize modern research so closely backs up the “do’s” in the Word of Wisdom and not just the “don’ts.”

One of my favorite parts of more fully living the truths found in the Word of Wisdom is learning how following a plant-based diet can prevent most, if not all of the commonly accepted diseases related to aging. Last spring, my mom lost her fourth sibling to cancer, my beloved Aunt Wilma. I felt very helpless as I realized that cancer seems to run in my family, and I prayed to know how to eat as healthfully as possible to avoid future illnesses. After watching the documentaries, I felt empowered that I could control my own health destiny. I decided to have my cholesterol tested to get a starting point to go from, and was shocked when the results came back high! I committed to six months of not eating animal products of any kind. I was retested in February and my cholesterol was down 30 points and is now in the “safe” zone. I am striving to lower it even more, and I love how healthy and strong I feel when I follow this way of eating. My migraines, body aches, acne, mood swings and cravings are greatly diminished, if not gone altogether.

“I’ve decided to stick with revelation on the subject of nutrition”

I am 61 years old, and from the time I married at age 20, I have always been interested in health and nutrition. My parents were ahead of their time in that they believed in cracked wheat cereal, whole wheat bread, and eating lots of fruits, vegetables and salads every day; however, there was always plenty of meat on the menu, and drinking milk at every meal was gospel.

I have enjoyed good health most of my life, and through vigilance, never had a weight problem. However, about six years ago I started having severe knee pain and was diagnosed with osteoarthritis. I visited an orthopedic doctor and was seriously considering surgery on my right knee. I had also had a couple of colonoscopies with several pre-cancerous polyps. My cholesterol levels were on the high side, although not dangerous. I was always constipated and also had rosacea, a skin condition.

My mother (now aged 92) has severe osteoporosis and arthritis, and my father (an amazing and active 94) has used statins and blood-thinners for years; both have had bouts with cancer (now seemingly in remission after surgeries and radiation). My husband’s father died at age 62 from heart disease, and his mother from stroke. With all this in the family, I became interested in finding ways to maximize our health possibilities.

About five years ago, I started making and drinking lots of green smoothies, per “Green Smoothie Girl.” This helped my digestion, but I continued to use lots of dairy every day, plus some meats and eggs. Then, three years ago, a friend recommended the book Eat to Live by Dr. Joel Fuhrman. The next week, we had lunch with friends who told us they were on a vegan diet and that it had cured their migraine headaches and prostate cancer. Then yet another friend recommended the book The China Study by Colin Campbell. I wondered why I was suddenly having all these encounters with whole food, plant-based (WFPB) information, but I did the reading and became convinced that the science was reliable.

I decided I would try the diet for three months and see how I felt. I had read and studied a number of diets before, so it was like a light went on when I realized that the WFPB diet was really just the Word of Wisdom stated anew! Now when people present me with information that contradicts it, I just say that I’ve decided to stick with revelation on the subject. Otherwise, one month it’s this, and the next month, it’s that. Tossed to and fro . . . whom to believe? But with divine counsel, it’s easy. Why did it take me so long to come to this understanding? It seems so obvious now. But cultural influences are powerful and had prevented me from embracing it sooner.

“I have now lost 163 pounds”

Four years ago it was getting progressively hard for me to get around. Something as simple as getting in and out of the tub became a safety issue.
 I had my bathroom remodeled and the tub removed. Safety bars were installed in the shower.

When shopping, I had to decide which side of the grocery store to shop as I couldn’t cover the entire store in one visit. I gave up my Sam’s Club membership and stopped shopping at Wal-Mart. I obtained a handicapped parking permit and started using a cane.

I had very low energy and stamina. Just the act of showering and getting dressed wore me out for the day. I never got a second wind. I learned to shower the night before for an activity the following day.

I told myself that I was feeling the effect of polio from when I was a child. There is such a thing as post-polio syndrome. Both my sister and my cousin have it, so it wasn’t a long stretch for me to think I had it too.

The one thing that set me apart from them was my weight. I decided it was time to eliminate weight from the equation. Then if I still had the symptoms I would go from there. My problem was the “how to.” I had already tried weight loss programs, yo-yo’ing through different diets, as well as starving. I fit the definition of insanity: repeating the same mistakes and expecting different results. I knew it had to be a lifestyle change.

I picked up my scriptures. I turned to Section 89 of the Doctrine of Covenants and whispered softly, “Help me to understand what this is really telling me.” With those words things were about to change.

“I am convinced this is the way to eat”

I grew up with a Mom who was mostly vegan for most of my growing up. Eating meat grossed me out (unless it was a very blackened barbequed hamburger—the good smell overcame the grossness), so I rarely ate meat. In fact, one of my earliest memories is picking out all the meat from my soup. I did eat lots of cheese, yogurt, eggs, etc. but did not “drink” milk—I only used it on cereal.

Almost twelve years ago, when I was pregnant with my third child, I had really bad migraines. I went to a doctor, who suggested that dairy (cheese in particular) might be partially to blame. At about this same time, my husband discovered he was lactose intolerant. We decided to cut milk and cheese out of our diet. At first I wondered what we would eat, but we found that soy milk was an easy substitute, and I found other things to eat besides grilled cheese sandwiches. My migraines did become much better, so it seemed worth it to continue.

We carried along with the rest of our mostly healthy diet (lots of fruits, some vegetables, and mostly whole grains, although we were still eating some processed foods) for about the next five years.

About six years later, after the birth of my fifth child, I became really interested in eating better (to be healthier and to lose the baby weight). My mom had discovered Dr. Fuhrman and Dr. McDougall, and had mentioned them to me. I researched their websites and books and started doing McDougall’s diet. I saw immediate results and continued eating a plant-based diet. I also added in Dr. Fuhrman’s huge salads to my evening meals. I became much stricter about the processed foods I ate and started sticking to low fat, whole foods.
